Cherry Yoghurt Pops
What's not to love about this refreshing treat to cool you down on a hot summers day.
1/2 Cup Cherries (frozen or fresh)
1tsp Balsamic Vinegar
1 tsp Water
2 tsp Honey
1 Cup Natural Greek Yoghurt
In a small saucepan, combine the cherries, balsamic vinegar, water and 1 tsp of honey. Heat over a low heat until it reaches a low simmer. Stir occasionally with a fork and squash the cherries to form a berry sauce type puree.
In a bowl mix the yoghurt and 1 tsp of honey. To this mixture add 2 Tbsp of the cherry puree and mix. This gives the yoghurt a pale pink colour.
Spoon the yoghurt mixture into some iceblock moulds until about two thirds full. Add a spoonful of the cherry sauce to each iceblock and gently swirl it around with a skewer until half way down. Freeze overnight before serving.
