Beetroot & Pumpkin Salad

Such a delicious salad full of goodness. This is the perfect salad for the summer.

Serves 4


Ingredients:

1 Cup Quinoa

3 Beetroots (roasted)

1/4 Jap Pumpkin (roasted)

2 Cups Rocket

1 Cup Macadamias

1 Tbsp Balsamic Vinegar

80g Feta Cheese


Method:

Cook the quinoa according to the packet directions. While the quinoa is cooking, chop the roasted beetroot and pumpkin into bite

size pieces.


Once the quinoa is cooked, add the pumpkin, beetroot, rocket, macadamias and balsamic vinegar. Toss the salad well. Add the feta cheese and then toss again lightly and serve.
